Selecting and Managing Comb Maturity

The timing of your harvest depends directly on the work completed by your bees. Honey capping is the process where worker bees place a thin sheet of pure beeswax over filled cells containing cured nectar. The mechanical function of this organic seal is to keep atmospheric moisture out and lock the stable, ripened sugars in. For a beginner, the key point is to only harvest frames where at least seventy-five to eighty percent of the honey cells are completely capped over.
